I'm posting this in part because of MamaNomerz's request for potato au gratin soup. Not sure if this fits the bill but I like it!

It says it yields 8 servings. I'd say more like 4 especially if it's the main course. We're big eaters! I serve with salad and crunchy roles.

Potato Soup

7 bacon strips, diced
3 cups cubed peeled potatoes (I use red, about 3-4 medium)
1 14 1/2 oz can chicken broth
1 small carrot, grated
1/2 cup chopped onion
1 tablespoon dried parsley flakes
1/2 teaspoon EACH, celery seed, salt and pepper
3 tbls. all purpose flour
3 cups milk
8 ozs. process American cheese cubed (i.e., Velveeta)
4 + green onions chopped for topping (optional...but yummy!)

In a large saucepan, cook bacon until crisp; drain. Add potatoes, broth, carrot, onion, parsley, celery seed, salt and pepper. Cover and simmer until potatoes are tender, about 15 minutes. Combine flour and milk until smooth; add to soup. Bring to a boil; boil and stir for 2 minutes. Add cheese; stir until cheese is melted and the soup is heated through. Garnish with green onions if desired.

Ok, I am such a cheater! LOL I haven't made potatoe soup from scratch in forever. Your recipe looks awesome. I may have to make a nice pot soon with all this cold weather, Sue!

I usually do 3 cans of Campbells cream of potatoe soup with milk to thin it some to a med. consistency (add more later if needed). Heat that up then add frozen potatoes o'brien until tender. Then I add the crumbled bacon, chopped gr. onions, shredded cheddar and some sour cream to taste.

When done, I serve it in a bowl with more shredded cheddar, green onions, bacon crumbles and french fried onions on top. Even small chopped tomatoes are nice too.

Yowza!!! That sounds great! Very similar but I'm liking the cheddar, french fried onions and sourcream...and the tomatoes! Yikes, I'm hungry!!! Hmmm, I think I'll try it your way next time...

Omg! I wish I would have seen this sooner. Yummy! I'm going to have to make this. Potatoe soup is one of my all time favorites. It is a comfort food for me. I would probably eat the whole thing by myself. Thanks Sue!!!!
