Brown 2 lbs ground beef, drain fat, add seasonings. Onion, bell pepper, celery. When they are wilted add one can drained corn and one can rotel diced tomatoes. Add 1 can tomato sauce. Let cook x 15 min.

Add 8 oz velveeta cheese on low fire til melted into the mixture.

In a bowl on the side---read below

Next mix a box of corn bread according to the instructions. I use Jiffy corn bread mix, the box is small so I used 2 boxes.

Spray a casserole dish with cooking spray. Pour meat mixture in it. Then pour the corn bread mixture on top. Bake according to corn bread box directions. When corn bread is golden brown it is ready.
