This recipe works well with tuna steaks also, but if you overcook tuna it will be like sawdust. It should be pink in the center.
Dip swordfish steaks in melted butter. Generously sprinkle with Old bay seasoning and grill over medium to hot heat for about 5 mins on each side or untill swordfish flakes easily when poked with a fork. Top with crumbled blue cheese and leave on grill untill cheese slightly melts.
