Does anyone have any good recipes for a mexican dish? We always have a themed Christmas Eve dinner at my mom's. This year it's mexican. We are already having 7 layer salad and chicken enchiladas. Any suggestions?

Sorry it took me a while to post this, I've been soooo focused on school & passing my finals I didn't have time to look for the recipe. I have made this before & everyone thought it was fabulous. But here it is:
2 cans (7 oz each) whole green chile peppers
3 cups (12 oz) shredded sharp cheddar cheese
4 green onions (including tops), thinly sliced
3 cups (12 oz) shredded mozzarella cheese
6 eggs
3 cups milk
3/4 cups all-purpose flour
1/4 teaspoon salt
2 cans (7 oz each) green chile salsa
Split chiles lengthwise & remove seeds & pith. Spead chiles in a single layer in a greased 9 x 13 inch baking dish. Sprinkle cheddar, green onions, & 1 1/2 cups of the mozzarella over chiles.
In a bowl, beat eggs, milk, flour, & salt together until smooth. Pour over chilies & cheese. Bake in a 325 degree oven for 50 minutes or until a knife inserted in custard comes out clean.
Meanwhile, mix salsa with the remaining 1 1/2 cups mozzarella cheese. Sprinkle over casserole & return to oven for 10 mintues or until cheese melts. Let stand for 5 minutes before serving. Makes 10 servings.
Per serving: 32 grams protein, 21 grams carbs, 268 mg cholesterol, 474 calories _________________

If you need just a side dish this is great. It has a great mexican flare to it.
And it is cheap to make. I know it will sound gross but just try it.
Mexican corn
2 cans corn drained
1 small onion chopped
Shredded cheddar cheese
1 can hot tamales
1 small can chili (no beans)
Saute onions in a small amt butter. When wilted add drained corn. Add small can of chili. Take can of hot tamales and unwrapp the paper off of them and cut them up into bite size pieces. Add to corn mixture in pot. Next mix up the cheese and when melted its done. You can also pour the corn mixture into a casserole dish and put the shredded cheese on top and bake til melted. It tastes really good.
You can add more corn if you like. Some times I use 3 cans of corn and keep everything the same. It makes a nice side dish. |

I decided to make chicken empanadas instead and flan. The empanadas are not easy to make but they turned out yummy! The flan, not so good....lol. _________________ Sarabear
