Cheesy Herb and beef bites
10 thin slices cooked deli roast beef
1/4 cup purchased garlic and herb spreadable cheese
1/4 cup finely chopped red bell pepper
1 bag of garlic flavor or regular bagel chips
2 tsp. fresh parsley or chives
Unfold each beef slice flat. Spread each slice with 1 tsp. garlic herb cheese. sprinkle with bell pepper and carefully roll up.
cut each roll into four pieces and place on bagel chips. Sprinkle with parsley and chives.
Raspberry-brie tarts
2 2.1 oz frozen mini fillo pastry shells
1 8 oz round brie cheese
3 Tbsp. raspberry spreadable fruit jam.
Heat oven to 350. place pastry shells on cookie sheet. Cut cheese into 1/2 inch cubes. Place 3 cheese cubes into each fillo shell. Bake 10 to 12 mins. or untill cheese is melted and bubbly.
remove from oven and spoon 1/4 tsp. of jam over each tart and return to the oven for an additional 3 mins.
Greek spinach pie tarts
2 2.1 oz frozen mini phillo pastry shells.
2 box frozen spinach thawed and drained
1/2 cup feta cheese
1/2 cup ricotta cheese
1/4 cup minced onion
2 eggs seperated
1/4 cup cottage cheese
1/4 tsp. tumeric
1/4 tsp salt
1/4 tsp pepper.
3 Tbsp. melted butter.
Squeeze all the water out of the thawed spinach and mix with cheeses, onion, tumeric, salt, pepper and 2 egg yolks that have been seperated from the whites.
Beat the egg whites untill soft peaks form. Fold into spinach mixture.
Brush each fillo cup with melted butter and then some spinach mixture. Bake at 350 for 20 mins or untill browned and heated through.
Vegetable blue cheese rounds
1 Tbsp. olive oil
1/3 cup chopped green onions
1/3 cup chopped red bell pepper
1/2 cup crumbled blue cheese
30 melba toast rounds
Heat oil in skillet and cook onions and peppers about 5 mins or untill tender crisp. Cool untill lukewarm (about 10 mins) and stir in cheese.
Heat oven to 350. Spoon 2 tsp. of cheese mixture onto each melba toast and place on cookie sheet.
Bake 1 to 2 mins or untill cheese just begins to melt.
