This sounds weird, but I tried it tonight and it was really good. I couldnt stop eating it.

1 Boboli thin crust pizza shell
2 cups heated mashed potatoes. (they can be left over or the premade store bought in the refrigerated section at the grocery store) Just heat in microwave.
4 green onions sliced
7 cooked slices of bacon chopped
1 1/4 cup shredded cheddar cheese
sour cream

Spread mashed potatoes over bobolli.
sprinkle green onions and cheddar cheese over top.
spinkle bacon over top
Bake 10mins or as Bobolli package directs.

Cut into slices or small squares for hor dorves and add a dollop of sour cream to each piece.

There is a pizza resturant near me that makes a "red potato pizza" that sounds very similar and it is delicious!

Your recipe sounds easy though and I'll definitely try it. Thanks Jamie.

Jamie we had this last night & it was yummy, cheap & easy to make 289)_9
I altered it a little bit by putting sour cream over the pizza base along with the mashed potatoa & i added a few more veges that i had in the fridge too like tomatoa & capsicum.

I used to work in a brick oven pizza place when I was in high school and we made a killer baked potato pizza. We used slices of baked potatoes though and sour cream as the base. Then sprinkled it with onion, green pepper, bacon, and a ton of cheese. Serve with ranch. Mmm Mmm Good!
