Looking for some good recipies that i can cook up a big pot of and heat up for dinner throughout the week or freeze up some portions. When my day is done so late in the evening, I can't stand to be up another hour or so trying to make something good.

i never made soup..well french onion but that was easy.
I made stew before but I wouldn't say I had the best recipe. There was a recipe that i did have that you used pilllsbury dough in the container and it made like a pot pie..I will see if i can find it = it was sooo good |

i have a recipe for Borscht (a Russian cabbage and beet soup), a pork & potato stew, and some black bean soup.... let me know if any sound appealing and i'll post them!
... and you know the little mccormick packets in the spice aisle at the grocery store? their beef stew one is great! _________________

I don't make very many soups, but I made Doreens Chicken chili (it's more soupy than chili) and I thought it was great.
I'm going to be copying my grandmothers recipe for celery soup pretty soon.....hopefully I don't screw it up. |

Pork-Tomato Stew
1lb well-trimmed boneless pork shoulder, cubed
3 med. red-skin potatoes
1lg. yellow summer squash or zucchini
1 can (14.5oz) diced tomatoes w/ roasted garlic
1 can (14.5oz) chicken broth
1tsp ground cumin
1tsp dried oregano
1/2 tsp salt
1/2 tsp pepper
1 can (15oz) chickpeas, rinsed
Coat a 4-6qt. saucepan with nonstick spray. Add pork & saute 5min or until browned.
Meanwhile, cut potatoes into 1-inch chunks and dice squash. Add to pork along with all of the remaining ingredients, except the chickpeas.
Bring to a boil. Reduce heat, cover, and simmer, stirring a few times, for 40 to 45min, or until pork is tender.
Stir in the chickpeas and heat through.
Black Bean Soup
1 large onion, chopped
3 cloves garlic, minced
1 green bell pepper, chopped
2 cans (or 3 cups) black beans, rinsed and drained
1 tbsp. oregano
1 tsp. cumin
2 bay leaves
1-2 tsp. chile powder
generous grating of black pepper
1-2 tsp. minced chipotle chiles in adobo sauce
2 15-ounce cans diced tomatoes
4-5 cups vegetable broth or water
1 cup fresh or frozen corn kernels (optional)
In a large pot, saute the onions, garlic, and bell pepper until the onions soften, about 3 minutes. Add the beans, seasonings, and tomatoes, and stir to combine. Add 3 cups vegetable broth or water. Reduce the heat to a simmer, and cook, uncovered, for about 1 hour, adding additional water or vegetable broth as needed to keep a soupy consistency. Just before serving, add the corn, if you like, and heat through. _________________

again you'll prob. notice im not big on measuring lol
ill cook up ground beef, add onion, and tons of garlic, then when its cooked ill make a gravy with it, add water just enough to make enough soup then add corn peas, potatoes what ever you want really, add spices, my prob is i use epicure spices and they already come blended, so i think i use garlic, cumin, and id throw in a tad of worchestire sauce
if you know epicure spice, what i use is called: beef and steak spice, herb and garlic spice, and a smidge of jamaican jerk.....I can find out for sure whats in them. then i go to allrecipes.com and type in herb dumplings, its an awesome meal and the soup is even better the second day.
