|
|
1/2 cup gold tequila
1 cup fresh squeezed lime juice (5 to 6 limes)
1/2 cup freshly squeezed orange juice (2 oranges)
1 Tablespoon chili powder
1 Tablespoon minced fresh jalapeno pepper (1 pepper seeded)
1 Tablespoon minced fresh garlic (3 cloves)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
4 boneless chicken breasts with the skin on ( they usually only come with the bone in, but the guy at the meat counter will take the bone out for you and leave the skin on if you dont want to debone it yourself)
Combine the tequila, lime juice, orange juice, chili powder, jalapeno, garlic, salt, and pepper in a large bowl. Pound out the chicken breasts to flatten and add to the bowl. Refrigerate overnight.
Remove chicken from marinade and sprinkle with salt and pepper. Grill skin-side down for about 5 minutes, untill nicely browned. Turn chicken and cook another 10 minutes or untill cooked through.

I make a recipe very similar to this and we LOVE it! It is worth the effort for sure! Good one Jaime! _________________

Mmmm, that sounds good too Jamie. I bet it comes out very moist - it's best to leave the skin on? Have you tried it with skinless?? _________________
