Even though it says it's a "not too sweet" recipe I thought it was a bit too sweet, I'll cut back on the sugar next time. Other than that it's fantastic!!!

INGREDIENTS (Nutrition)
* 3 cups cooked and mashed sweet potatoes
* 1/3 cup packed brown sugar
* 1/3 cup eggnog
* 2 tablespoons margarine, melted
* 1 teaspoon vanilla extract
* 1/2 teaspoon salt
* 2 egg whites
* 1/2 cup packed brown sugar
* 1/4 cup all-purpose flour
* 2 tablespoons butter

DIRECTIONS
1. Preheat the oven to 350 degrees F (175 degrees C). Coat one 2 quart baking dish with non-stick cooking spray.
2. Combine the mashed sweet potatoes, 1/3 cup brown sugar, eggnog, melted margarine, vanilla extract, salt and egg whites. Spoon mixture into the prepared baking dish.
3. Combine the 1/2 cup brown sugar and flour. Cut in the chilled 2 tablespoons margarine until the mixture resembles coarse crumbs. Sprinkle over the sweet potato mixture.
4. Bake at 350 degrees F (175 degrees C) for 30 minutes.

That sounds like something my grandma used to make only it also had pecans in the topping. It was so good. I don't think hers had the eggnog though. I'm going to try this one.
You mentioned about cutting back on the sugar. Are you talking about in the sweet potato part or the topping? _________________

I'm not quite sure, maybe cut it all out in the potatoes and just have the topping. The topping is good! _________________ I thought my life was a tragedy until I realized that I had a choice.

I love this recipe. I have made it before using chopped pecan pieces in the topping.
My hubby thinks it's on the sweet side, but I love it just as it is.
