Does anyone have any suggestions as to what goes good with a country ham?
Someone gave us one, and I have it soaking now. So this is the first stage of the process.
I need a couple of sides to go with it for Monday....TIA

Here you go.......it tastes like the inside of a twice baked potato, and it's easy as hell to make.
This is the best ever potato dish. And it can be made a few days in advance.
Potato Casserole
8 large potatoes (or 12 smaller ones)
8 oz cream cheese
1 cup sour cream
1/2 tsp salt
1/2 tsp pepper
2 tsp garlic salt
4 TBS butter, melted
Peel potatoes and boil until of mashing consistency. Drain and add to mixing bowl with cream cheese, sour cream, salt, pepper, and garlic salt. Mix until smooth. Pour into casserole dish and smooth top so it's flat. Pour melted butter over the top and sprinkle with paprika if desired. Bake at 400 degrees for about an hour until top is golden brown.
If making ahead, do not add melted butter until you are ready to bake it. |

If you are making it on Monday then I would have it with collard greens and black eyed peas with cornbread. Its a tradition to have greens and blackeyed peas on New years day in the south, but my aunt is from up north and never heard of it. The Greens are for money and the blackeyed peas are for luck.
