This is the best cheesecake recipe I have tried and I tried lots of them. It doesnt crack in the middle and its also good without the fruit topping. Its best to start it early if you want to have it by dinner time.
For the crust
1 1/2 cups grahmn cracker crumbs (or 10 crackers ran through the food processor)
1 Tablespoon sugar
6 Tablespoons (3/4 stick) unsalted butter, melted
For the filling
2 1/2 pounds cream cheese, at room temperature
1 1/2 cups sugar
5 whole, large eggs, at room temperature
2 egg yolks, at room temperature
1/4 cup sour cream
1 tablespoon fresh lemon juice
1 1/2 teaspoons pure vanilla extract
For the topping
1 cup of raspberry jelly or jam. ( Not the preserves)
3 half pints fresh raspberries
Preheat oven to 350
Combine grahmn cracker crumbs , sugar, and melted butter. Pour into a 9-inch springform pan. With your hands, press the crumbs into the bottom of the pan and about one inch up the sides. Bake for 8 mins. Cool to room temperature.
Raise the oven temperature to 450
To make the filling, In a large bowl cream the cream cheese and sugar with electric mixer on medium speed untill light and fluffy, about 5 mins. Reduce the speed and add eggs and egg yolks, two at a time, mixing well. Add the sour cream, lemon juice and vanilla. Mix thoroughly and pour into the cooled crust.
Bake for 15 mins. Turn the oven temp down to 225 degrees and bake for another 1 hour and 15 mins. Turn the oven off and open the door half way. Allow the cake to sit in the oven with door open for 30 mins. Take the cake out of oven and let sit another 2 hours or untill completely cool. Wrap and refrigerate for atleast 4 hours or overnight.
If you make the topping, melt the jelly over low heat. Remove from heat and mix in the raspberries. Arrange the berries on top of the cake. This also works with fresh blueberries, strawberries or peaches.

| This sounds like a good recipe. I have never made a "real" cheesecake, just the boxed ones. |

| YUM! I make lots of cheesecakes as they are my favorite thing to make and eat. I'll make this one this summer when my raspberries in my garden are ripe. Thanks! |
