I usually grill a few strips of marinated chicken breast on my George Foreman grill along with slices of squash and zucchinni (sp?)

Boil angel hair pasta according to package and drain. Heat up a jar of alfredo sauce and mix pasta into it. .

There ya go, you have a meal. Alfredo pasta with grilled chicken and veggies on the side. It is quick and easy. I have not made it in a while so I better get to the store. I love that stuff.

Hey Bec! Were you looking for more of a side pasta dish? Here's one.

I've done this one before, though sometimes I modify with greek dressing instead (adding some feta and bl. olives and deleting the basil and parmesan cheese) and sometimes adding chopped cucumber with just a basic italian dressing. It's from http://www.kraftfoods.com/

Fresh-from-the-Garden Tomato Pasta


Prep Time: 10 min
Total Time: 20 min
Makes: 4 servings


3 cups rotini pasta, uncooked
1 medium onion, chopped
2 cloves garlic, minced
1/4 cup KRAFT Balsamic Vinaigrette Dressing
4 cups coarsely chopped tomatoes
1/2 cup chopped fresh basil
1/2 cup KRAFT 100% Grated Parmesan Cheese


COOK pasta as directed on package; drain. Place in large bowl; cover to keep warm.
COMBINE onions, garlic and dressing in large nonstick skillet; cook 2 min. or until onions are tender. Stir in tomatoes; cook 2 min.
ADD to pasta along with the remaining ingredients; mix lightly.


KRAFT KITCHENS TIPS

Substitute
Prepare as directed, using penne pasta.

Creative Leftovers
Cover and refrigerate any leftovers. Serve for lunch the next day along with cold sliced cooked chicken.

Another good one if you like tuna salad is to boil cheese tortellini until done, then put in a bowl with some canned tuna (however much you like). Then I like to add some chopped onions, celery, roasted red peppers, cooked frozen peas, and mayo to taste (I usually use miracle whip lite though). Then I season with a little salt, pepper and dill to taste. Yum!!
It's a neat change of pace from the usual tuna pasta salad.

Oh that's a great idea. Do you freeze it in blocks or just in baggies? I've never done anything like that but it would really come in handy. I have a little makeshift garden and am expanding to grow a few herbs in addition to my chives next season.

I saved yogurt containers (with the lids), washed them, and store the pesto in them in the freezer. That way, they are portioned perfectly so I only take out what I need.

Freezer baggies would work fine too.

Ooo, I have some good ones. They're not mine. I got them right from Giada DeLaurentis' show Everyday Italian. I made all three of them for my C'mas Dinner party for 30 people!

They're super simple, yet very tasty and unusual. Even making the recipe X4, they were all excellent. Didn't loose one bit of flavor by making the recipe in large quantity.

I LOVE pesto! I grow tons of Italian parsley and basil in my garden every year with the intention of making pesto. I have yet to do it! LOL!!!! I always just by premade in the gourmet section of the store!

Kel, what exactly do you put in your pesto? The traditional ingredients? Do you use pine nuts? They're so expensive. Can you use another nut?

k mine is super fattening lol
i sautee or fry (whatever lol) mushrooms onions in a bit of margarine, cook either ham or chicken, add the meat, then add 1 litre of cream, then in a cup i put a bit of flour in it and stir with cold water (like if you wanted to thicken your gravy) put that in it, add some salt and pepper, pour it all over whatever pasta.....mmm yum its my favourite.
