There's some prep time with all the veggies, but I love this dish! I throw chicken breast chunks in and call it a meal.

It's always good with sausage too, but a little less healthy.

i loooooove oven-roasted veggies.

i buy the little white boiling onions and throw them in a 500 degree oven for about 5-10min. Then I add zucchini, yellow squash, carrots, and broccoli. I cook those until they look nice and lightly browned (turning a few times), and then I add some salt, pepper, and fresh marjoram... cook for a minute or so longer and WOW- it tastes great!!

you'd be surprised at how sweet the roasted carrots and onions are- they're my favorite!!
