If you haven't tried this yet - worth it -- I have had mashed sweet peas and mashed Cauliflower - both out at restaurants -- I have done the mashed cauli myself - with the cream - not too much - very good....not sure which peas i would like better - but both of these sounded good


1 cup Raw geen peas
½ cup Plain non fat yogurt
1 teaspoon Lemon juice
2 Garlic cloves
¼ teaspoon Red pepper flakes
¼ teaspoon Cumin
1 tablespoon Water
Salt and pepper to taste

Let peas soak in water over night. Cook peas for 20 minutes. Transferr to a blender add rest of the ingredients.

Change to: servings US Metric
3 cups chicken stock
3 lbs green peas, shelled
1 large onion, finely chopped
2 tablespoons brown sugar
1/2 teaspoon salt
1/2 teaspoon saffron

Food Processor/Blender Side Dishes

Bring chicken stock to a boil.
Add all other ingredients.
Cover and cook over a medium heat for 12-15 minutes or until the peas are soft.
Mash pea mixture or puree them in a blender.
Return the puree to a pot and simmer to rewarm.
Serve in soup bowls.
Garnish with a sprig of parsley or a twist of black pepper is desired.


And

Mashed cauliflower tastes similar to mashed potatoes but reduces the carbohydrates. This simple recipe produces a smooth and creamy dish, and you can add a bit of cream, if desired.

Serves 4
1 medium head organic cauliflower, cut into small florets (about 6-7 cups)
2–3 TB extra virgin olive oil
2–4 TB water
sea salt to taste
Boil the cauliflower in water until very tender, about 10 minutes. Drain and place in a blender or food processor. Add olive oil and water, one tablespoon at a time until a smooth consistency, similar to mashed potatoes, is reached. Season with salt and serve immediately.

Per serving (About 11/2 cups/155g-wt.): 110 calories (80 from fat), 9g total fat, 1.5g saturated fat, 3g protein, 7g total carbohydrate (3g dietary fiber, 3g sugar), 0mg cholesterol, 190mg sodium
