This recipe also works well with pork that has been cut into cubes. Its usually served with Spatzle noodles and cucumber salad. I have the recipe for those also if anyone wants them. This is DH's recipe and he doesnt have exact measurements for the seasoning. You just have to taste it and add salt and pepper as needed.
6-8 pieces of chicken with the bone in and skin on. It can be thighs, Breast, legs or wings. Or you can use a 2lb pork tenderloin cut into cubes.
2 large onions chopped
salt
pepper
red pepper flakes
paprika (preferrably hungarian)
1 cup sour cream
2 tablespoons olive oil
1 tablespoon butter or margarine
Melt butter and oil over medium heat in large pan. Add chicken pieces or pork and brown on all sides.
Remove chicken or pork to plate and add onions to pan and saute about 5 mins.
Place chicken back in pan with onions and season with a teaspoon each of salt, pepper, paprika, and red pepper flakes.
Pour 1 cup of water over it and simmer over low heat covered.
When liquid reduces, add another half cup of water and 1 Tbsp. paprika, and another teaspoon of salt.
Continue adding a half cup of water everytime it reduces untill meat is tender. About 3 hours. It has to be checked and stirred often to keep from burning.
Once meat is tender check sauce and add salt, pepper , and paprika if needed. The sauce should be dark red.
Remove from heat and stir in sour cream.

OH, that sounds so yummy! I am looking for new recipes. Can you add the cucumber salad recipe when you get a chance??? I may try this next week when I do the weekly grocery shopping.  _________________

Here is the recipe for cucumber salad. I got this one from DH also and he really doesnt have the measurements, but its pretty easy anyways.
Peel and thinly slice 6 cucumbers.
Sprinkle with salt and let sit in a collander for 30 mins.
Squeeze all the juice out of cucumbers and place in a large bowl.
Add about one cup of sourcream give or take a little
About a teaspoon fresh chopped dill
one clove garlic minced
2 teaspoons apple cider vinegar or any kind that you have is fine.
Pinch of sugar
Mix all together and season with more salt if needed. Sprinkle paprika over top. |

Jamie, is your DH Eastern European? I make the same salad for my bf- i call it one of his crazy Russian salads :)
and I learned about the Chicken Paprikash through a Russian cookbook I bought last year
other variations on the salad...
shredded cabbage, shredded cucumber, salt, vinegar
sliced cucumber, sliced tomato, salt, sour cream, dill
sliced cucumber, sliced radish, salt, sour cream, dill
sliced tomato, sliced onion, sour cream, dill
(hmmm.... you do you think eastern europeans like sour cream and dill much?!) _________________
