I declared this a winner. Everyone liked it.... even my sons friend who doesnt eat anything but hot dogs.

2 12 ounce packages of ready to eat, trimmed green beans
6 medium sized potatoes peeled and cubed ( I used Yukon golds)
2 regular sized cans cream of chicken soup undiluted
12 ounces shredded Colby/ jack cheese
1/4 teaspoon pepper

Preheat oven to 350. Lightly grease large shallow casserole dish with margerine.

Boil potatoes and green beans untill tender, but not mushy.

Drain potatoes and green beans and mix with soup, cheese, and pepper.

Bake covered for 30 mins. Remove cover and bake additional 15- 20 mins or untill bubbly and browned around sides.

That does sound good. :)


Maybe your son's friend can add that to his diet instead of eating hot dogs all the time. I'm surprised he doesnt get sick of eating them that often.

Jamie I usually don't like green bean casserole but with the potatoes added into that recipe I think it has to be a winner.

I just copied it for the next time I need a casserole recipe.

If you do try it, it will look thick and goopy when you mix it all together, but baking it for that long time does something to it. Next time I make it I think I will use one can of cream of mushroom in place of one of the chicken.
