This one is real quick and easy and is refreshing on a hot day. . . .
Seedless cucumber - chopped
Roma Tomatoes - chopped
Red onion - sliced thin or chopped (whatever you prefer)
Bell pepper - chopped (I use colored sometimes)
Feta cheese - flavored or plain (tomato basil is yum)
Mix all ingredients and drizzle with Kraft Greek Vinegarette dressing. Put in fridge to let flavors set and enjoy. Serve with warmed pita bread.
Also, I like to add canned garbanzo beans. Olives would be good too, but no one likes them at my house like I do.

Oooooh Thanks Ash! I would lie this also on a hot day. I grow tomatoes and Im going to start growing more veggies too. Can't wait to try this out.  _________________

I grow tomatoes too! Last season I did zucchini, bell peppers, chives, pea pods (which didn't make it ) and I tried cucumbers from seeds. The cuke plant (only 1 grew up) ended up climbing up my tomato grates and plant which actually worked out well. I got a few nice cucumbers buy my zucchini plant did awesome! Lots of zucchini bread, stir fry, and steamed zuke.
