Soft Ginger Cookies
Ingredients:
2 1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 teaspoon baking soda
3/4 cup butter, softened
1 cup granulated sugar
1 egg
1 tablespoon water
1/4 cup dark molasses
1/2 cup chopped crystallized ginger
1/4 cup granulated sugar
Directions:
Preheat oven to 350 degrees F. Sift flour, ginger, cinnamon, cloves, salt, and baking soda together. Set aside.
In a large bowl, cream together the butter and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water, molasses, and crystallized ginger. Gradually stir the sifted ingredients into the molasses mixture.
Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
Bake for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.
Makes approximately 2 dozen cookies
I got this recipe from AllRecipes.com and adapted it more to my liking by changing a few proportions and adding the crystallized ginger. _________________

I had a recipe for Snowballs and now I cant find it. They taste kind of like pecan sandies but they are round and dusted in powdered surgar. When you bite into them they kind of burst in your mouth. They are so good and simple to make, but I cant remember exactly. They are as popular as chocolate chip cookies so I thought someone might have the recipe.
