Chocolate-Chip Brownie Cones
1 brownie mix
½ cup oil
¼ cup water
3 eggs
2 cups semisweet chocolate chips divided
12 flat bottom wafer ice cream cones
2 teaspoons vegetable shortening
Assorted candy sprinkles
Preheat oven 350 degrees. Position a rack in the lower third of the oven.
In a medium mixing bowl mix the brownie mix, oil, water, and eggs with wooden spoon until just blended. Stir in 1 cup of chocolate chips.
Divide batter between the 12 cones. Stand cones upright in a standard-size muffin pan.
Bake 25-30 minutes or until toothpick comes out almost clean. Do not over bake. Transfer pan to rack to cool.
In a small saucepan melt the remaining chocolate chips with the vegetable shortening, stirring until melted and smooth. Remove from heat. Dip tops of brownie cones into melted chocolate. Stand cones upright and sprinkle with assorted sprinkles. Place in refrigerator 30 minutes to set the chocolate. Makes 12 cones.
