I just made Chili last week from the Southern Living Cookbook - it was soo quick and easy - This one's a keeper - the best thing is that it only has 274 calories per 1 cup serving :sprt6%:
4 Stalks Celery - chopped
3 green onions - chopped
2 cloves garlic - minced
1 large onion - chopped
1 green pepper - chopped
1 tablespoon vegetable oil
2 pounds ground beef
1 (15 ounce) can tomato sauce
1 (6 ounce can tomato paste
2 cups water
6 tablespoons chili powder
1 teaspoon salt
Dash of pepper
1 (16 ounce) can kidney beans, undrained
*Saute first 5 ingredients in hot oil in a large Dutch oven over medium high heat 5 minutes or until tender. Add ground beef and brown, stirring until meat crumbles. Drain meat well.
*Add tomato sauce and next 5 ingredients to beef mixture; stir well. Bring to a boil; reduce heat, and simmer, uncovered, 30 minutes or to desired consistency. Add beans during the last 15 minutes.
I added these condiments: cheddar cheese, chopped onions, and a little dollop of fat free sour cream. I bet a little avocado or tortilla chips would be good too!!
ENJOY!! _________________

I made this chili for the boys yesterday and they loved it. I did "play" with the recipe a tad bit- I tried to sneak in the celery but the boys would not have it. It's amazing how many cooks were in the kitchen????? It's weird though- I usuallu cook and not a word- make chili and they're all experts. LOL |

Happy to Be....that's a great one. I haven't made Chili in forever and I just might now that the weather is turning so darn cold.
