Potatoe Au Gratin Soup? I just Absolutely Love Culvers Potato au gratin. Anything close to that would be perfect. I'm craving it badly.

I don't have a recipe for the soup, but I make a cheese sauce for cauliflower. Sorry though, I just throw it together, I don't measure it.
A cup or so of Milk (I usually use fat free milk, but I've mixed it with whole before too)
A couple TBS Cornstarch
About 1 TBS butter
A little salt
Some pepper
4-5 slices Kraft singles
Mix all ingredients except cheese together and stir over low heat (I use a whisk) until thickened. (Careful, it will burn easily) Then add 3-4 cheese slices and mix into the sauce. I then pour it over cauliflower and then place 2 more slices of cheese on top.
You have to use Kraft slices though.(I imagine Velveta would work too, but I haven't tried it) Regular cheese gets all chunky and gross. |

Take a look at Kellyw928's recipe on here for broccoli soup. Do the exact same thing except substitute 6-8 large peeled cubed potatoes for the brocolli and cauliflower. Stir in shredded cheddar cheese at the end. Top with fresh white bread crumbs that have been toasted in butter if desired.
